3/4 cup orange juice
2 tablespoons brown sugar
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
500 gr pork loin cut into cubes
1 1/2 mangoes cut into cubes without skin
1/4 cup chopped cilantro
In a deep plate combine the orange juice, brown sugar, salt, pepper and chili. Then add the oil and stir well.
Place the pork in a large ziploc bag along with the orange juice marinade, close and stir everything well. Refrigerate for 2 to 6 hours to concentrate flavors.
On bamboo skewers, place the pork and mango alternately. With a brush, apply the remaining marinade to each skewer.
Place the skewers on the grill over medium-high heat and cook for 6 to 8 minutes, turning once. Remove from grill, serve and garnish with cilantro.
Enjoy!
