2 tablespoons vegetable oil (soy, canola, olive)
2 boneless, skinless chicken breasts
salt and pepper to taste
juice of half a lemon (approximately 1 tablespoon)
3 tablespoons homemade or commercial chicken broth (defatted)
2 teaspoons fresh grated ginger
1/4 cup fresh basil, finely chopped
2 tablespoons fresh mint leaves, finely chopped
Place the oil in a skillet and heat over medium-high heat.
Season the chicken on both sides with salt and pepper. Place in the skillet and cook, turning once, approximately 5 minutes on each side or until cooked through. Remove from the skillet and set aside.
Add the lemon juice to the skillet, scraping up all the chicken juices. Add the ginger and chicken broth and bring to a boil.
Remove the skillet from heat and add the basil and mint to the broth, combine.
Place the chicken breasts on a serving plate and drizzle the sauce over them.
