Grams of fat: 8 gr equals 1 and a half fat serving

2 tablespoons of olive oil
1 cup of finely chopped onion
1 cup of finely chopped bell pepper
3 garlic cloves finely chopped
1 teaspoon of salt
pepper to taste
1/3 cup of red wine vinegar
3 tablespoons of molasses
2 tablespoons of Worcestershire sauce
2 tablespoons of lemon juice
1/4 cup of natural tomato sauce
1 1/2 cups of mango cubes peeled
2 jalapeños finely chopped
2 boneless, skinless chicken breasts
Heat the oil in a large skillet over medium-high heat.
Add the onion, sauté for 2 minutes. Then add the bell pepper, garlic, salt and pepper and cook for another 2 minutes.
Add to the skillet the vinegar, molasses, Worcestershire sauce, lemon juice, and tomato sauce and cook for 1 minute.
Pour the sauce into a blender and add the jalapeño and mango, blend until smooth and liquid in texture.
Place one cup of prepared sauce in a ziploc bag, insert the chicken and marinate for 1 hour.
Remove the chicken from the bag and place on a baking sheet (without the sauce). Set the oven to broil and cook the chicken for 12 minutes, turning once.
Remove from the oven and let rest for 10 minutes, then slice and drizzle 1/2 cup of the barbecue sauce on top.
