Pear and Pistachio Guacamole

A refreshing way to enjoy fruits and healthy fats is this guacamole. An exotic variation of the traditional version, you can enjoy it as a salad or served with tortillas.

Ingredients:

  • 3 ripe avocados cut into cubes

  • 2 ripe pears cut into cubes

  • 2 tablespoons fresh cilantro finely chopped

  • 1 1/2 tablespoons lime juice

  • salt to taste

  • 1 garlic clove finely chopped

  • pepper to taste

  • 3 tablespoons roasted pistachios finely chopped

Preparation:

  • In a medium bowl, place and mix the avocados with the pears.

  • Add the cilantro, lime juice, salt and garlic, stir.

  • Taste and add pepper and salt to taste if needed.

  • Transfer to a serving plate and top with the roasted pistachios.
