2 cups all-purpose flour
1 cup rolled oats
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon grated ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups plain yogurt
1/3 cup vegetable oil
2 large eggs
1 tablespoon vanilla
1 cup fresh peaches, diced
Preheat oven to 350 degrees and spray a cupcake pan with cooking oil spray
In a medium deep bowl mix the dry ingredients (flour, oats, sugar, baking powder, baking soda, ginger, and salt.)
In another medium deep bowl combine and stir the wet ingredients (yogurt, oil, eggs, and vanilla).
Slowly incorporate the wet ingredients with the dry ingredients, stir until everything is well combined. Then add peaches to the mixture and place in baking pan.
Bake for 50 to 60 minutes or until a toothpick comes out clean from the cake.
