Light and moist, this cake is packed with fresh peaches and oats, perfect for breakfast or coffee time. A delicious treat that provides nutrients and a touch of sweetness for those with a sweet tooth.

Ingredients:

  • 2 cups all-purpose flour

  • 1 cup rolled oats

  • 3/4 cup sugar

  • 2 teaspoons baking powder

  • 1 teaspoon grated ginger

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups plain yogurt

  • 1/3 cup vegetable oil

  • 2 large eggs

  • 1 tablespoon vanilla

  • 1 cup fresh peaches, diced

Preparation:

  • Preheat oven to 350 degrees and spray a cupcake pan with cooking oil spray

  • In a medium deep bowl mix the dry ingredients (flour, oats, sugar, baking powder, baking soda, ginger, and salt.)

  • In another medium deep bowl combine and stir the wet ingredients (yogurt, oil, eggs, and vanilla).

  • Slowly incorporate the wet ingredients with the dry ingredients, stir until everything is well combined. Then add peaches to the mixture and place in baking pan.

  • Bake for 50 to 60 minutes or until a toothpick comes out clean from the cake.
