I’m sharing this very easy recipe with you, and it’s super quick to make. You can enjoy it at breakfast time or as a snack for dinner. You could say it’s the healthy version of McDonald’s Egg McMuffin.
Calories: 235 kcal.
Grams of fat: 9 gr. equivalent to 1 fat serving.
Grams of carbohydrates: 24 gr. equivalent to 1.5 grain servings
Grams of protein: 18 gr. equivalent to 2 protein servings.
Note: The nutritional information may vary according to the quantity and type of ingredients used.
1 English muffin
1 thin slice of ham
1 egg
1 tablespoon of bacon bits
1/2 cup of finely chopped spinach
Salt, pepper, and cooking spray oil
Toast the English muffin.
Use a shallow small plate (preferably the same width as the bread). Spray it with cooking oil and place the folded ham slice at the bottom.
Place the egg on the plate with the ham, break the yolk and lightly beat the egg.
Add the spinach and bacon bits. Stir until the spinach is well coated with the egg.
Season with salt and pepper to taste. Place in the microwave for 30 seconds.
Remove and stir a bit. Place in the microwave again for 30 to 40 seconds or until the egg is cooked.
Remove from the plate with a fork and place on the bread.
Enjoy!
