1 medium zucchini
2 teaspoons canola oil
500 gr lean ground beef
3 tablespoons chile flakes
2 teaspoons onion powder
1 teaspoon ground cumin
1/2 teaspoon salt
12 corn tortillas
cooking spray oil
3/4 cup shredded cheddar cheese
Preheat oven to 350 degrees.
Shred the zucchini and then place on paper towels to remove excess liquid (should yield 2 cups of zucchini).
Heat a skillet over medium-high heat with canola oil. Add the zucchini, meat, chile flakes, onion powder, cumin, and salt. Cook, stirring constantly until the meat is thoroughly cooked, approximately 5 to 7 minutes.
Place the tortillas on a baking sheet and cook in the oven for 2 minutes or until warm, transfer to a plate and cover.
Spray the baking sheet with cooking spray oil.
Form the taquitos: place a tortilla on a plate, put 1/4 cup of meat mixture in the center of the tortilla, then roll into a taco shape and place on the baking sheet. Repeat the process with the remaining tortillas.
Spray all taquitos with cooking spray oil and bake for 15 to 18 minutes or until golden.
