Ingredients:

  • 1 medium zucchini

  • 2 teaspoons canola oil

  • 500 gr lean ground beef

  • 3 tablespoons chile flakes

  • 2 teaspoons onion powder

  • 1 teaspoon ground cumin

  • 1/2 teaspoon salt

  • 12 corn tortillas

  • cooking spray oil

  • 3/4 cup shredded cheddar cheese

Preparation:

  • Preheat oven to 350 degrees.

  • Shred the zucchini and then place on paper towels to remove excess liquid (should yield 2 cups of zucchini).

  • Heat a skillet over medium-high heat with canola oil. Add the zucchini, meat, chile flakes, onion powder, cumin, and salt. Cook, stirring constantly until the meat is thoroughly cooked, approximately 5 to 7 minutes.

  • Place the tortillas on a baking sheet and cook in the oven for 2 minutes or until warm, transfer to a plate and cover.

  • Spray the baking sheet with cooking spray oil.

  • Form the taquitos: place a tortilla on a plate, put 1/4 cup of meat mixture in the center of the tortilla, then roll into a taco shape and place on the baking sheet. Repeat the process with the remaining tortillas.

  • Spray all taquitos with cooking spray oil and bake for 15 to 18 minutes or until golden.

Enjoy!
