Here’s a rice variation packed with vegetables that, despite being fried, is not excessively caloric. Enjoy!

Approximate Nutritional Content (2/3 cup):

  • Calories: 160 kcal.

  • Grams of protein: 3 gr.

  • Grams of fat: 3 gr. equivalent to half a fat serving

  • Grams of carbohydrates: 29 gr. equivalent to 2 starches.

Note: the nutritional content may vary according to the quantity and type of ingredients we use.

Ingredients:

  • 2 teaspoons of olive oil

  • 1 leek cut finely

  • 1 large carrot cut finely

  • 3 large cabbage leaves

  • 2 cups of cooked rice (preferably brown)

  • 1 cm of grated ginger root (thickness of a finger)

  • 2 tablespoons of soy sauce

Preparation Steps:

  • Heat the oil in a skillet (medium-high heat).

  • Sauté the leek and carrot until golden. Add the chopped cabbage and a pinch of salt. Stir.

  • After 1-2 minutes add the rice with the grated ginger. Stir everything very well.

  • Add the soy sauce (you can use the indicated amount or adjust to taste). Stir.

  • Remove from heat and serve.
