This is an interesting variation on the typical quesadilla. We hope you’ll enjoy it.

1/2 avocado, diced
1/2 tomato, diced
1/4 cup sweet pepper
1 teaspoon lime juice
1 tablespoon cilantro, finely chopped
1/4 teaspoon dried cumin
30 gr mozzarella or Mexican-style cheese (shredded)
2 wheat tortillas
Mix the avocado, tomato, sweet pepper, lime juice, cilantro, and cumin in a deep bowl.
Heat a skillet with spray oil.
Place one of the tortillas in the skillet, put half the cheese on top, then the avocado mixture and the remaining cheese on top of the avocado. Cover with the other tortilla.
Press down with a spatula or, if you prefer, with something heavier like a kettle filled with water. Cook for 2 minutes or until golden and flip.
Cook for another 2 minutes on the other side.
Can be served with dipping sauce (fresh tomato or chunky style) Enjoy!
