This dish can serve to vary our typical side dishes (white rice, mashed potatoes), without exceeding caloric and nutrient content. I hope you like it.

Approximate Nutritional Content: 3/4 cup

  • Calories: 89 kcal.

  • Grams of protein: 2 gr.

  • Grams of fat: 0 gr.

  • Grams of carbohydrates: 20 gr. equivalent to 1.5 servings of grain/vegetable and fruit.

Ingredients:

  • Cooking spray oil

  • 1/2 cup fresh mushrooms, chopped

  • 1/2 cup bean sprouts

  • 1/2 cup sweet bell pepper, finely chopped

  • 1/2 cup canned pineapple without sugar

  • 1/2 tablespoon low-sodium soy sauce

  • 1 teaspoon grated ginger

  • 1/4 teaspoon salt

  • 2 cups cooked rice (hot)

Preparation:

  • Heat a pan (over medium-high heat) with cooking spray oil. Sauté the mushrooms, bean sprouts, and sweet bell pepper.

  • Add the diced pineapple, soy sauce, ginger, and salt. Stir well and heat thoroughly.

  • Mix well with the cooked (and hot) rice. Serve.
