Cooking spray oil
1/2 cup fresh mushrooms, chopped
1/2 cup bean sprouts
1/2 cup sweet bell pepper, finely chopped
1/2 cup canned pineapple without sugar
1/2 tablespoon low-sodium soy sauce
1 teaspoon grated ginger
1/4 teaspoon salt
2 cups cooked rice (hot)
Heat a pan (over medium-high heat) with cooking spray oil. Sauté the mushrooms, bean sprouts, and sweet bell pepper.
Add the diced pineapple, soy sauce, ginger, and salt. Stir well and heat thoroughly.
Mix well with the cooked (and hot) rice. Serve.
