This recipe is quite complete and offers a different alternative for enjoying quesadillas and seafood. It can be served at dinner time or as a light lunch.

150 gr. of shrimp without shells.
2 tablespoons of cilantro, finely chopped
1 tablespoon of lemon juice
1/4 teaspoon of cumin
2 large tortillas (for making burritos)
2 tablespoons of sour cream
2 teaspoons of salsa (chunky)
2 tablespoons of shredded cheddar cheese
Cut the shrimp into small pieces.
Combine cilantro, lemon juice, and cumin in a deep bowl. Add the shrimp pieces. Let rest for 5 minutes.
Heat a skillet over medium heat with cooking spray oil. Add the marinated shrimp, fry for 1-2 minutes or until the shrimp turns pink. Remove from heat and with a spoon remove only the shrimp, leaving the liquid in the skillet.
Add the sour cream to the marinade in the skillet. Stir well.
In another skillet, heat the tortillas. Place 2 teaspoons of salsa on the tortillas and on top place half of the shrimp and 1 tablespoon of cheese.
On top, place 1 tablespoon of the sour cream mixture, fold the tortilla in half and flip it to cook the other side.
Repeat the same steps with the other tortilla and the remaining ingredients.
