This delicious recipe is low in calories and combines protein with fruit. It has a sweet and savory combination and pairs perfectly with a serving of rice and vegetables.

Grams of fat: 7 gr. equals 1 fat serving
Grams of protein: 20 gr. equals 3 protein servings
Grams of carbohydrates: 33 gr. equals 2 grain/fruit servings

1 large can of sliced pineapple (with juice)
4 boneless chicken breasts
2 garlic cloves (minced or pureed)
1 teaspoon ground thyme
pepper to taste
2 teaspoons oil
1 tablespoon cornstarch
3 tablespoons honey
3 tablespoons Dijon mustard
Drain the pineapple, reserving the liquid.
Rub the chicken with the garlic paste, thyme, and pepper.
Heat the oil in a skillet over high heat. Brown the chicken on both sides, then lower to medium heat.
Combine 2 tablespoons of pineapple juice with the cornstarch in a small bowl, set aside.
Combine the honey with the Dijon mustard, add to the skillet with the chicken along with the remaining pineapple juice.
Cover the chicken well with the sauce, cover and let simmer (boil) for 15 minutes.
Uncover, add the cornstarch mixture to the chicken and sauce. Stir.
Place the pineapple slices on top of the chicken, cook stirring until it boils and the sauce thickens.
