1 teaspoon olive oil
1/2 onion finely chopped
1 sweet potato cut into cubes (small or medium)
salt to taste
1 tablespoon bacon bits
Heat the oil over medium-high heat in a skillet.
Add the onion and cook until golden brown.
Add the sweet potato cubes and salt, leave them on the heat for 2 minutes then stir and leave again without stirring for another 2 minutes.
Add 1/2 cup water, stir and make sure nothing has stuck to the bottom of the skillet, cover and let the water evaporate (approximately 5 minutes).
Uncover and stir. If the sweet potato is still firm, add another half cup of water, cover again and let the water evaporate.
Repeat this procedure until the sweet potato reaches your preferred texture (soft).
Once the water has evaporated, add the bacon bits, stir and leave on the heat for 2 minutes so it absorbs the bacon flavor, remove from heat and serve.
