This recipe is very low in calories and combines proteins with vegetables, making it quite complete for lunch or dinner.

  • Calories: 92 kcal.

  • Grams of fat: 1 gr.

  • Grams of protein: 13 gr. equivalent to 2 portions of protein

  • Grams of carbohydrates: 8 gr. equivalent to 1/2 grain

Ingredients:

  • 350 grams of skinless chicken breast, cooked and cubed

  • 1 tablespoon of chopped chives

  • 1/4 cup of chopped celery

  • 1/2 cup of light mayonnaise

  • 1/4 cup of finely chopped onion

  • 1 teaspoon of Dijon mustard

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of pepper

  • 3 large sweet peppers of any color, cut in half and seeded

Preparation Steps:

  • In a large deep bowl, combine the chicken, onion, and celery.

  • In another bowl, combine the mayonnaise, chives, mustard, salt, and pepper. Mix very well.

  • Add the chicken mixture to the mayonnaise mixture. Mix until the chicken is well coated.

  • Fill each bell pepper half with the chicken salad. Garnish with more chives if desired.
