350 grams of skinless chicken breast, cooked and cubed
1 tablespoon of chopped chives
1/4 cup of chopped celery
1/2 cup of light mayonnaise
1/4 cup of finely chopped onion
1 teaspoon of Dijon mustard
1/2 teaspoon of salt
1/2 teaspoon of pepper
3 large sweet peppers of any color, cut in half and seeded
In a large deep bowl, combine the chicken, onion, and celery.
In another bowl, combine the mayonnaise, chives, mustard, salt, and pepper. Mix very well.
Add the chicken mixture to the mayonnaise mixture. Mix until the chicken is well coated.
Fill each bell pepper half with the chicken salad. Garnish with more chives if desired.
