Curry Chicken Stuffed Sweet Potatoes

This dish is super complete and contains all macronutrients—simply add a salad and you have lunch or dinner ready. You can also swap the sweet potato for regular potato for a different flavor.

Ingredients:

  • 1 sweet potato (270 g)
  • 1 chicken breast (200 g)
  • 1 teaspoon curry powder
  • salt to taste
  • 1 teaspoon olive oil
  • 2 green onions
  • 1 oz (30 g) cheddar cheese

Preparation:

  • Preheat oven to 350 degrees
  • Pierce the whole sweet potato with a fork and cook in the microwave for 5 minutes or until soft
  • While the sweet potato cooks, cut the chicken breast into cubes and season evenly with curry powder and salt, set aside
  • Cut the green onion separating the green part from the white part
  • Heat the oil in a skillet over medium-high heat. Sauté the chicken with the white part of the green onion until the chicken is completely cooked, approximately 3 minutes
  • Transfer the cooked chicken and green onion to a bowl
  • Cut the cooked sweet potato in half and scoop out all the filling, leaving only the shells. Combine the sweet potato filling with the chicken
  • Stuff the sweet potato shells with the chicken mixture, sprinkle cheddar cheese on top and bake for 5 minutes or until the cheese melts
