This recipe is a different way to use carbohydrates in our diet. It also contains ingredients that can help strengthen the immune system. It can be eaten alone or as a side dish to meat.

1 can of whole beans (can be red or black)
1 cup of sweet corn
1 cup of diced celery
1/2 cup of sweet pepper diced
1/4 cup of diced onion
2 tablespoons of hot pepper (optional)
1/4 cup oil (olive, canola, or soy)
1/4 cup white wine vinegar
A pinch of salt
Combine the beans, corn, celery, sweet pepper, and onion in a deep bowl.
Combine the remaining ingredients (oil, vinegar, and salt) in another dish until well emulsified.
Add the oil-based dressing to the bean mixture, and let marinate for one hour.
