Peach, Basil, and Mozzarella Salad

This simple yet refreshing dish is a perfect variation of the classic caprese salad. The best part is that it includes fruit, so it can be enjoyed as a snack or as part of a more substantial meal.

  • Calories: 194 kcal.

  • Grams of fat: 11 gr. equivalent to 2 fat servings

Ingredients:

  • 3 fresh, ripe peaches (with or without skin)

  • 1 cup fresh basil (cut into strips)

  • 240 gr fresh mozzarella (can be used in small balls)

  • 2 teaspoons olive oil

  • 1/4 teaspoon salt

  • 1/8 teaspoon pepper

Preparation:

  • Cut each peach into 6 or 8 slices, then cut those slices in half.

  • In a large deep plate, combine the peaches with the basil and cheese. Drizzle the olive oil on top, add the salt and pepper. Mix well.

  • If desired, you can cover it and refrigerate. Serve at room temperature or chilled.
