This simple yet refreshing dish is a perfect variation of the classic caprese salad. The best part is that it includes fruit, so it can be enjoyed as a snack or as part of a more substantial meal.

3 fresh, ripe peaches (with or without skin)
1 cup fresh basil (cut into strips)
240 gr fresh mozzarella (can be used in small balls)
2 teaspoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
Cut each peach into 6 or 8 slices, then cut those slices in half.
In a large deep plate, combine the peaches with the basil and cheese. Drizzle the olive oil on top, add the salt and pepper. Mix well.
If desired, you can cover it and refrigerate. Serve at room temperature or chilled.
