2 tablespoons olive oil
1/2 cup finely chopped onion
1 1/2 cups cauliflower cut into small pieces
1/2 cup shredded low-fat cheddar cheese
5 large eggs
1/2 cup skim milk
1 teaspoon paprika
1/2 teaspoon salt
Preheat oven to 350 degrees.
Grease a deep pie dish or casserole with olive oil.
Place the onion evenly in the dish and put in the oven while preparing the remaining ingredients.
In a deep bowl, beat the eggs, add salt and milk, stir well.
Remove the dish with the onion from the oven, place the cauliflower and cheese on top of the onion, then cover with the egg mixture. Sprinkle paprika over everything.
Bake for approximately 30 minutes or until golden.
