2 large eggs
1/2 cup skim milk
1/2 teaspoon vanilla
1 1/2 teaspoon cinnamon
6 slices whole wheat bread
Cooking spray oil
Light maple syrup or fruit
In a shallow bowl, mix and stir the eggs, milk, vanilla, and cinnamon well.
Heat a skillet over medium heat with cooking spray oil.
Dip both sides of the bread in the egg mixture, making sure it is well coated.
Place the bread slices in the skillet, cook for 2-4 minutes on each side or until golden brown.
Place on a plate, top with syrup and fruit.
