2 tablespoons lime juice
2 tablespoons sugar
1/2 teaspoon salt
1/4 cup fresh parsley, finely chopped
2 medium cucumbers, with skin, sliced or cut into cubes
3 cups watermelon, cut into cubes
Combine lime juice, sugar, and salt in a deep dish. Stir, then add the parsley.
Add the cucumber to the mixture, stir until the cucumber is well coated. Then add the watermelon.
Cover, set aside so all the juices incorporate. Stir and let sit at room temperature for one hour.
