This refreshing option is perfect for hot days. It combines fruits with vegetables, making it an excellent side dish or snack.

Approximate Nutritional Content: 1 1/2 cup of salad

  • Calories: 90 kcal.

  • Grams of fat: 5 gr. equals 1 fat serving

  • Grams of carbohydrates: 20 gr. equals 1 vegetable/fruit serving

  • Grams of protein: 2 gr.

Ingredients:

  • 2 tablespoons lime juice

  • 2 tablespoons sugar

  • 1/2 teaspoon salt

  • 1/4 cup fresh parsley, finely chopped

  • 2 medium cucumbers, with skin, sliced or cut into cubes

  • 3 cups watermelon, cut into cubes

Preparation Method:

  • Combine lime juice, sugar, and salt in a deep dish. Stir, then add the parsley.

  • Add the cucumber to the mixture, stir until the cucumber is well coated. Then add the watermelon.

  • Cover, set aside so all the juices incorporate. Stir and let sit at room temperature for one hour.
