Ingredients:

  • 500 gr small potatoes

  • 250 gr green beans, washed and cut in half

  • 4 strips of turkey bacon cut into small cubes

  • 2 garlic cloves, finely minced

  • 2 tablespoons olive oil

  • salt and pepper to taste

  • 1 tablespoon lemon juice

Preparation Steps:

  • In a pot, cover the potatoes with water (at least 2 fingers above) and salt to taste. Bring to a boil and cook for 15-20 minutes or until tender. Drain the water.

  • In a skillet, heat the oil over medium-high heat. Add the potatoes, garlic, salt and pepper. Cook while slightly mashing the potatoes until they are golden, 5-7 minutes. Remove from heat and place on plates.

  • In the skillet add the bacon and brown (and toast) for 5 minutes. Remove from heat and drain on a paper towel.

  • Place the green beans in the skillet, cook until they are slightly tender, approximately 5 minutes. Remove from heat.

  • Return the potatoes and bacon to the skillet. Add the lemon juice and salt and pepper to taste. Toss. Serve combined with the green beans.
