This dish can be used as an appetizer to a main course or as the main dish for lunch or dinner. Very easy to make and quite refreshing. Warning: it is a little spicy.

Ingredients:

  • 2 tablespoons lime juice

  • 1 tablespoon canola oil

  • 2 teaspoons brown sugar

  • 1/2 teaspoon chile flakes

  • 500 gr. small peeled shrimp

  • 1 cup finely chopped bell pepper

  • 1 cup finely sliced cucumber

  • 1/4 cup fresh herbs such as basil, mint, and cilantro

Preparation:

  • In a large deep bowl, mix the lime juice, oil, sugar, and chile flakes.

  • Add the shrimp, cucumber, bell pepper, and herbs. Stir everything well.

  • Serve over a bed of lettuce.
