This recipe is a bit more elaborate than others I've posted, but with a little extra effort you'll have a delicious dish to serve at dinners or lunches. It's quite full of nutrients, so it would be recommendable to serve it with some vegetables or salad.

Grams of carbohydrates: 16.1 gr equivalent to 1 vegetable and grain serving
Grams of protein: 44 gr equivalent to 5 protein servings

1 medium apple
1/2 large onion
170 gr spinach
1/4 cup parsley
2 garlic cloves
1/2 large carrot
4 lean pork tenderloins
salt and pepper to taste
2 beaten eggs
2 cups seasoned breadcrumbs (salt, pepper, paprika, Italian seasoning)
2 tablespoons olive oil
Preheat oven to 375 degrees.
Finely chop the onion, apple, spinach, parsley, carrot, and garlic.
In a skillet with spray oil, sauté the chopped ingredients for about 10 minutes.
Using a meat mallet, flatten the tenderloins well and season with salt and pepper.
Place 1/4 cup of the sautéed vegetables in each pork tenderloin, roll up and secure with toothpicks. Dip each roll in the beaten egg and then in the breadcrumbs.
Place one tablespoon of oil in a baking sheet, place the rolls on top and spray with the other tablespoon of oil. Bake for 20 minutes or until cooked through.
