1 1/2 cup rice milk
1 cup cooked sweet potato, mashed
4 egg whites
1 teaspoon vanilla
1 cup rice flour
2 packets of splenda or stevia
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
a pinch of salt
In a large deep bowl mix the rice milk, sweet potato, egg whites, and vanilla.
In another bowl combine the remaining ingredients (dry). Then mix wet ingredients with dry ingredients.
Heat a skillet with spray oil over medium heat. Pour 1/4 cup of the mixture into the skillet and cook until golden. Flip and brown the other side as well.
Serve.
