This is a nutritious alternative to traditional flour pancakes. Rich in various nutrients and delicious with syrup too. Enjoy them for breakfast along with your serving of fruit.

  • Calories: 215 kcal.

  • Grams of fat: 1.26 gr.

  • Grams of protein: 5.8 gr. equivalent to 1 protein serving.

  • Grams of carbohydrates: 44 gr. equivalent to 3 grain servings

Ingredients:

  • 1 1/2 cup rice milk

  • 1 cup cooked sweet potato, mashed

  • 4 egg whites

  • 1 teaspoon vanilla

  • 1 cup rice flour

  • 2 packets of splenda or stevia

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • a pinch of salt

Preparation:

  • In a large deep bowl mix the rice milk, sweet potato, egg whites, and vanilla.

  • In another bowl combine the remaining ingredients (dry). Then mix wet ingredients with dry ingredients.

  • Heat a skillet with spray oil over medium heat. Pour 1/4 cup of the mixture into the skillet and cook until golden. Flip and brown the other side as well.

  • Serve.
