This recipe is a perfect combination of sweet and savory, and you can add a puree or side dish of your choice. It can be high in fat, so you can use skinless chicken.

Ingredients:

  • 12 chicken drumsticks with skin

  • Salt and pepper to taste

  • 2 cups apple juice

  • 1/2 cup apple cider vinegar

  • 1/4 cup low-sodium soy sauce

  • 2 teaspoons honey

  • Zest of one lemon

  • 1/4 teaspoon chili flakes

  • 2 teaspoons sesame seeds

  • 1 tablespoon unsalted butter

Preparation:

  • Preheat oven to 400 degrees. Place a wire rack on a baking sheet. Place the drumsticks on the racks and season with salt and pepper to taste.

  • Bake the chicken for 30 minutes, flip the drumsticks and cook until golden, approximately 30 minutes more.

  • To make the sauce: in a pan over medium-high heat, bring to a boil the apple juice, vinegar, soy sauce, honey, zest, chili flakes and a pinch of salt. Cook until it reaches a sticky consistency, approximately 20 to 25 minutes. Set aside until the chicken is ready.

  • Add the sesame seeds to the sauce, heat it slightly if it’s cold. Place the chicken on a large deep plate and drizzle the sauce over it along with the butter. Season with more salt and pepper if necessary. Transfer everything to a serving plate.
