12 chicken drumsticks with skin
Salt and pepper to taste
2 cups apple juice
1/2 cup apple cider vinegar
1/4 cup low-sodium soy sauce
2 teaspoons honey
Zest of one lemon
1/4 teaspoon chili flakes
2 teaspoons sesame seeds
1 tablespoon unsalted butter
Preheat oven to 400 degrees. Place a wire rack on a baking sheet. Place the drumsticks on the racks and season with salt and pepper to taste.
Bake the chicken for 30 minutes, flip the drumsticks and cook until golden, approximately 30 minutes more.
To make the sauce: in a pan over medium-high heat, bring to a boil the apple juice, vinegar, soy sauce, honey, zest, chili flakes and a pinch of salt. Cook until it reaches a sticky consistency, approximately 20 to 25 minutes. Set aside until the chicken is ready.
Add the sesame seeds to the sauce, heat it slightly if it’s cold. Place the chicken on a large deep plate and drizzle the sauce over it along with the butter. Season with more salt and pepper if necessary. Transfer everything to a serving plate.
