For these hot days there’s nothing better than ice cream, and to top it off, make it low in calories, delicious and super easy to make at home. This ice cream contains dairy and healthy fats.

Approximate Nutritional Content: 1 popsicle, recipe yields approximately 10 popsicles

  • Calories: 106 kcal.

  • Grams of fat: 3 gr. equivalent to half a fat serving

  • Grams of carbohydrates: 17 gr. equivalent to 1 carbohydrate serving

  • Grams of protein: 4 gr. equivalent to half a protein serving

Note: Nutritional information may vary according to the quantity and type of ingredients used, as well as the portion size.

Ingredients:

  • 3 cups vanilla yogurt

  • 1 cup shredded coconut (sweetened)

  • 1/2 teaspoon coconut extract

Preparation:

  • In a medium bowl combine the yogurt, coconut and extract.

  • Divide the mixture into 3 oz (85 gr.) containers or popsicle molds, insert a stick into each container.

  • Freeze for at least 6 hours.

  • Unmold from the container to serve.
