For the potatoes:
3 large potatoes cut into thin slices
2 tablespoons of olive oil
2 teaspoons of black pepper
salt to taste
For the dip:
2 teaspoons of olive oil
1 small onion cut finely
2 green onions cut finely, separating white and green parts
1 1/4 cups of low-fat Greek yogurt
1/4 cup of mayonnaise
3/4 teaspoon of onion powder
3/4 teaspoon of garlic powder
1/2 teaspoon of salt
1/4 teaspoon of pepper
Place the potatoes in a large deep bowl along with the olive oil and pepper, stir well to coat all the potatoes.
Preheat the oven to 400 degrees, and place the potatoes on baking trays (well separated). Bake for 20 to 25 minutes or until golden and crispy. Then remove from the oven, season with salt and let cool.
For the dip: Place the oil, onions and white green onion parts in a pot. Cook stirring constantly until soft and golden brown, approximately 10 minutes. Remove from heat and let cool.
Combine the onions with the yogurt, mayonnaise, onion and garlic powder, salt, pepper and green onion. Stir well to incorporate everything.
Refrigerate the dip for at least 1 hour, then remove and serve with the chips.
