1/2 cup lemon juice
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon pepper
4 bone-in, skin-on chicken breasts
To make the marinade: mix the lemon juice, honey, salt, and pepper in a deep bowl.
Place the chicken with the marinade in a cooking bag and refrigerate for the entire day.
Preheat the oven to 350 degrees. Cover a baking sheet with aluminum foil and place a rack on top.
Place the chicken on the rack. Cook for 50 to 60 minutes depending on the size of the chicken.
Once the chicken is done, let it rest for 10 minutes and serve.
