This recipe is perfect for Holy Week days. Very simple to make and makes for a quite complete lunch.

  • Calories: 247 kcal.

  • Grams of fat: 4 gr. equals 1 fat serving

  • Grams of carbohydrates: 30 gr. equals 2 grain servings

  • Grams of protein: 24 gr. equals 3 protein servings.

Note: nutritional information may vary according to the amount of ingredients used.

Ingredients:

  • 1 large carrot, shredded

  • 2 tablespoons rice vinegar

  • 1/3 cup fresh cilantro, finely chopped

  • 2 1/2 tablespoons light mayonnaise

  • 2 1/2 tablespoons plain yogurt

  • 1 tablespoon lemon juice

  • 1/4 teaspoon black pepper

  • 3 Baguette-style bread rolls

  • 250 gr cooked shrimp, cleaned and peeled

  • 18 slices cucumber (thin)

  • 1/2 cup green onion

Preparation:

  • Place the shredded carrot and rice vinegar in a deep bowl, mix well and let rest while preparing the remaining ingredients.

  • In another deep bowl, place the cilantro, mayonnaise, yogurt, lemon juice and black pepper, mix well.

  • Cut the bread in half, spread 2 tablespoons of the mayonnaise mixture on each half of the Baguette bread.

  • Add the shrimp to the remaining mixture and stir.

  • Drain the carrot well and place on the bread evenly, top with shrimp, cucumber and green onion.

  • Cut the baguette bread into individual sandwiches.
