This recipe is perfect for Holy Week days. Very simple to make and makes for a quite complete lunch.

1 large carrot, shredded
2 tablespoons rice vinegar
1/3 cup fresh cilantro, finely chopped
2 1/2 tablespoons light mayonnaise
2 1/2 tablespoons plain yogurt
1 tablespoon lemon juice
1/4 teaspoon black pepper
3 Baguette-style bread rolls
250 gr cooked shrimp, cleaned and peeled
18 slices cucumber (thin)
1/2 cup green onion
Place the shredded carrot and rice vinegar in a deep bowl, mix well and let rest while preparing the remaining ingredients.
In another deep bowl, place the cilantro, mayonnaise, yogurt, lemon juice and black pepper, mix well.
Cut the bread in half, spread 2 tablespoons of the mayonnaise mixture on each half of the Baguette bread.
Add the shrimp to the remaining mixture and stir.
Drain the carrot well and place on the bread evenly, top with shrimp, cucumber and green onion.
Cut the baguette bread into individual sandwiches.
