This recipe is very simple and quick to prepare, perfect for dinner or even to serve as an appetizer at a social event. It’s quite healthy and can be accompanied by a salad.

Approximate Nutritional Information: 1 sandwich (recipe makes 5 sandwiches)

  • Calories: 360 kcal.

  • Grams of fat: 11.6 gr. equivalent to 2 fat servings

  • Grams of carbohydrates: 29.9 gr. equivalent to 2 carbohydrate servings

  • Grams of protein: 33.6 gr. equivalent to 5 protein servings

Note: Nutritional information may vary depending on the quantity and type of ingredients used.

Ingredients:

  • 3 cups roasted boneless chicken breast

  • 1/3 cup finely diced onion

  • 1/4 cup sliced almonds

  • 1/4 cup plain yogurt

  • 1/4 cup light mayonnaise

  • 1 teaspoon fresh rosemary

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

  • 10 slices whole grain bread (square)

Preparation:

  • Combine the first 9 ingredients in a deep plate and mix well.

  • Place 2/3 cup of the chicken mixture on each of 5 bread slices. Place the other bread slice on top.

  • If desired, you can cut the sandwich in half.
