Zucchini and Spinach Soup

This is a practical and different way to use vegetables. I hope you make it and enjoy it.

Approximate Nutritional Content per Serving:

  • Calories: 90 kcal,

  • Protein grams: 4 gr. which equals 1/2 protein serving

  • Fat grams: 4 gr. which equals 1 fat serving.

  • Carbohydrate grams: 10 gr. which equals 1/2 grain serving

Note: nutritional information may vary according to the quantity and type of ingredients used.

Ingredients:

  • 1 tablespoon olive oil

  • 1 onion finely chopped

  • 500 gr zucchini cut into pieces with skin and seeds

  • 2 tablespoons bacon bits (badia brand is dried bacon)

  • 2 cups fat-free chicken broth

  • 2 tablespoons parmesan cheese

  • 5 sprigs of thyme

  • salt

  • 3 cups spinach

Preparation:

  • Heat the oil in a large pot and sauté the onions until golden.

  • Add the zucchini and bacon bits and continue sautéing.

  • Once the zucchini is lightly browned, add the chicken broth and bring to a boil. Cook until the zucchini softens.

  • Place the broth with zucchini in a blender, blend until smooth and then add the cheese, thyme, a pinch of salt and spinach. Blend everything.

  • Serve with an extra pinch of cheese and thyme. It can be served cold or hot.
