This is a practical and different way to use vegetables. I hope you make it and enjoy it.

Protein grams: 4 gr. which equals 1/2 protein serving
Fat grams: 4 gr. which equals 1 fat serving.
Carbohydrate grams: 10 gr. which equals 1/2 grain serving

Ingredients:
1 tablespoon olive oil
1 onion finely chopped
500 gr zucchini cut into pieces with skin and seeds
2 tablespoons bacon bits (badia brand is dried bacon)
2 cups fat-free chicken broth
2 tablespoons parmesan cheese
5 sprigs of thyme
salt
3 cups spinach
Heat the oil in a large pot and sauté the onions until golden.
Add the zucchini and bacon bits and continue sautéing.
Once the zucchini is lightly browned, add the chicken broth and bring to a boil. Cook until the zucchini softens.
Place the broth with zucchini in a blender, blend until smooth and then add the cheese, thyme, a pinch of salt and spinach. Blend everything.
Serve with an extra pinch of cheese and thyme. It can be served cold or hot.
